Zucchini Fritters

Yes, we arrived home from camping; no, I haven’t had a moment to post. My husband shared a post yesterday with a delicious recipe so I’ll borrow a piece of that for today. Though we only have 5 zucchini plants in the garden, they are yielding a ton of huge zucchinis!! Wow!

Yum! Last summer, a fiend’s mom gave me a huge zucchini from her garden so I had to get creative…ratatouille and muffins were made in abundance!

We’ve been looking up a lot of recipes; it’s amazing how many things you can make with zucchini!!
